Not without land!

The human heart finds pleasure in wine.

Having studied winemaking techniques, my wife Virginie and I have decided to face
up the challenge of producing, raising and selling « Cahors » wine : my life’s work !
There is no wine without the essence of the grape ! Ours cuvées come from Malbec
grape variety and reflects the diversity of our « terroir », which defines our unique
property.

Château de Ponzac wines are composed of five cuvees « AOP » Cahors called :
– « Maintenant ou jamais » (now or never) cultivated in (marly) limestone soil
– Château Ponzac cultivated in clay-limestone soil
– « Le Tempéradou » and « Côt dolia » taken from the ferruginous clay soil
– « Les Peyrières » grown admist the valley terroir and round pebbles sprinkled
within the ground.
These five cuvées are the result of a long and rigorous managements of the grapes :
a control of the yields, prune and a separate vinification of each plot. Then the exacting process of blending the grapes begins, guided by the expertise and experience of the vigneron : it is a real intimate and essentiel moment for the vigneron. This last step is where the the expression of our terroir is fully realized.

For Château of Ponzac, an investment of our expert’s knowledge, collaboration of
talent, an exactness to detail, is what drives a new millesim. But your palate is the only judge. So discover our cuvees and enjoy the different tastes on your palate : we welcome you in our domain.

Environmental

Preservation

Environmental preservation is a central issue for the future. Since 2018, the vineyard is managed according to the principles of organic farming. Our respect for the environment is at the heart of organic agriculture and our approach to preserve and transmit a rich and living soil to the future generation.

This work requires a demanding and restrained practice. We must be conscious and aware of the preservation of biodiversity. It is a real struggle : we fight everyday. Innovation at the service of our soil, of human beings and of agriculture respectful of ecology : that is what organic culture means !

Polyculture

a tool for biodiversity

With climate change, Virgine and I are more conscious than ever of the usefullness of crops diversity because it is a indipensable tool for the future of our profession. We begun a few years ago with the plantation of trees adapted to the climate while preserving the existing extensions.

Hedges and wooded areas are integral part of our vineyard. Other projets, such as beekeeping and the return of animals to the field, will soon strengthen our actions. Constant research regarding adaptation and improvement is the challenge we face. We are seeking to create a rare wine with an exceptional terroir cultivated in biodynamics.
